View Full Version : Tequila + chilli - update 13/07: tasted

My inner nihilism inspired the idea of making a lethal concoction, infusing tequila with chilli. Not an entirely new or unique thought but it's something I've wanted to try for a while and discussing it during the week has built motivation.

The idea so far is to get a not-entirely-cheap (ie, $50-$60) bottle of tequila, slicing up the chillis and letting it rest in the bottle for at least a month.
It's since progressed, to try this in a few smaller bottles with variations to see what works best. We're looking at using habenero for a real kick, and someone suggested adding a teaspoon of sugar to the mix to add to the flavour.

What I'm after is feedback/advice from anyone experienced with tequila drinking, chilli consumption or a combination of both, as to what I should be looking to do to make this worthwhile. What brand should I buy, how should I prepare the chilli (I'm thinking of slicing the flesh but not cutting them up entirely, so they stay whole), what the best bottle to store them in would be, etc...
I'll be getting it all together this weekend and am aiming for a month to let it reach maximum burnination but doing it in small batches will allow me to experiment a bit, and am willing to try different ideas that are suggested.

Bring the pain

So your going for heat rather than taste? Personally I would much rather a chilli taste rather than heat.

If its heat your after, and you have the time, chop up the seeds and add them to the mix.

PS. Here i am talking about heat and meanwhile my post count is 666..... oooooo

Capsaicin dissolves quite nicely in alcohol so I would suggest going very easy with the chillis. One problem with chilli alcohol (from experience) is that the only thing that relieves the heat is more chilli alcohol.... so you can easily end up very pissed and in a great deal of pain. Try a thin-walled chilli like a serrano, birds-eye or cayenne, the fleshier ones will break apart and look like shit.

You could try heating the tequila ... that is how chilli is pickled ...
I heat vinegar and pour it over the chilli.
You could also try heating the tequila after the chilli has been added , I read somewhere this was the way to do chocolate vodka.

I had some chilli schnapps last weekend, possibly the foulest tasting concoction i've ever had, but don't let me stop you, i'm a chilli wuss.

The most interesting drink I've ever had was a white chocolate and chilli martini in Queenstown. Just a nip of chilli in the tail; you couldn't even taste the chilli till you'd put the glass down.

I should google the recipe..

Had the following cocktail at my going away drinks at Loop on Sunday:
Lake of Fire Chilli infused tequila, thai herbs and mango, fixed to intentionally blow your head off!

There's also a few raw chillis in there as well but tbh it wasn't that spicy (then again this was the fifth cocktail of the night after a shiteload of beers.

Chilli beer and chilli wine's pretty deadly though. The wine works really well as a dessert wine but the beer kind of shoots itself in the foot as you want to drink a shitload of beer to cool you down but that only makes it worse!

I've made chilli tequila a few times now and it is freaking nice!

Each time I used fresh, small red chillis (birds eye or whatever you want to call them).

The first time I used about 3 or 4 chillis and sliced them down the side a little with a knife - if you don't want seeds floating in your drink then don't put a big slice through them, just give it a bit of a nick. It took about a week or two of inverting the bottle a couple of times each day for the flavour to infuse in the tequila but (to me) it was worth the wait :)
The second time I got a bit overzealous (read: I was drunk) and put about 10-12 chillis in... it was chillified in just 24 hours but then each day it just kept getting hotter and hotter because I couldn't get all the chillis back out again, slippery little suckers! That was a fun filled drink experience every time, better when I served it to unsuspecting friends, hehe.

Maybe practice on a cheap bottle of tequila and then if you like it move on to the better stuff?

If you drink that stuff for enjoyment, you must have a cast-iron stomach!

However, if you're drinking it to make a spectacle of yourself, or create an image, or get some dares going (and to be honest, I'm a sucker for that kinda stuff too...:o), then you should go all the way and get, similar to Mescal and the agave worm, the tequila that has a SCORPION sitting at the bottom of the bottle. It seems to be popping up in a lot of privately owned bottle shops now (don't bother with the chain or big name bottleshops looking for this though).

You show up with a bottle of that, with some habaneros floating around in it, with a scorpion in the bottom... people will think you've got a freakin' deathwish!:D

Purely for enjoyment :)
I tried some chilli tequila at a Mexican restaurant once but didn't want to have to go there and pay $15 for one drink again, so I made it at home.

SCORPIONwin! :D

Gotta wait 'til next payday now. And waiting a month to infuse properly isn't an issue either, it'll be winter then. perfect.

BadASS.

Let me know if you have trouble finding the brand. I'll go to a nearby bottle shop and check what the name of it is and the price. Also, you might want to check a few different bottles of it. Some have some pretty small, beat-up, pathetic scorpions in them, and I've seen a couple of bottles with nice sized specimens in good, proud shape (tail sticking up and everything). I mean, hell, if you're going to buy a bottle of tequila with a scorpion in it, you might as well pick a good looking scorpion! :D

Yes, I'd like the preserved weaver-ant eggs please, with a side of pregnant crickets. For afters I'll go with the vodka scorpion lollipop and a shot of centipede whiskey!

I don't know if you'd get them into Australia but there's some great gift ideas there!

Just a warning, most of the museum samples we have of foreign snakes from the SE Asia region are form confiscated bottles of Snake Wine... a lot of the snakes in those bottles are protected by CITES and therefore illegal to import.

While its all fun and games until someone looses and eye, if you exist on that stuff for the night, just remember what a good curry can do to you and how bad AGB's can get...You need hazmat suits to deal with that shit.

For the more normal people that might like to make something the missus can enjoy too, get a good (i said good, not stoli) vodka and your choice of skittles, i prefer to buy a few packets and separate all the flavors and infuse that into a bottle. You can do it as strong or weak as you like, but really its dead set easy. Just give it a week or so until the skittles have dissolved and you're laughing...Just like your mates when you drink your chili tequila .

Beer was bought purely for the bottles, thought having the flip cap would be a nice touch to have.

Don't worry I well and truly know what sort of consequences we're up for, in fact I woke up at 2am tonight and couldn't sleep due to the results of seriously excessive garlic consumption. I'm surprised we haven't had the EPA over yet.

CJ, thanks for the advice, I was planning on two per bottle but since the plan is to have 4 batches maybe I'll alternate between one and two. The lighter stuff I intend on infusing with sugar and lime juice too, to add to the flavour.

Will probably cook it up on Saturday and give it a month from then before sampling.

Just stumbled on this thread. Good luck. I've had both chilli tequila and vodka and prefer the vodka. Its a waste of good tequila to put chilli in. However I will probably try now you have put the idea in my head and I have a bottle or two of tequila in the cupboard. What I have made and and has received positive feedback is chilli schnapps. I buy the cheapest bottle of butterscotch schnapps a week or so out from when I think I will drink it buy a small handfull of birdseye chiilies. Slit the chillies down one side and place in the schnapps for a week. I haven't tried habs purely because it was for general consumption and not everyone is a hothead. I then remove the chillies before drinking and chill the bottle in the freezer. The taste starts like butterscotch schnapps and ends with a pleasant glow......Looking forward to hearing how your tequila tastes

Have been busy doing nothing lately, but that delay left the original chillis to go to waste. New ones were aquired, unfortunately they're only orange but no doubt they'll pack enough punch for what we want.
It all came together today...

Hey, good luck with this.

Sam and I both like tequila. He brought me back a nice bottle of Patron silver last year. We were both a little over-zealous with it at New Year. I'm still cautious how I nudge tequila now, even today.

Sam may like the tequila/chilli thing, since he likes both.

I have tried chilli schnapps. (A distillery near Jyndabine makes them.) I can't say I enjoyed it. Too hot for me, and the flavour wasn't very nice. Their peach was too sweet but their sour apple was delicious.

Cracked open a bottle on Saturday night.

SHIT FUCKING WOAAAHHHH!
Some serious pain, tastes like liquid death. Good for shots, a sip or two is doable but gulps are out of the question. Many LOLS from wannabeheroes giving it a go against my educated advice :D

I saw your idea and made a bottle aswell. Drank it with some friends at an end of semester celebration. We all took shots.

After the shot, there was maybe two seconds where it only tasted like chilli and didn't have the burn. We all sat there looking at each other thinking "that wasn't too bad..."

Then the burn hits. And it hits like a punch.

My mouth was a raging inferno, my lips stung, my tung was outright gone. It took maybe 10 minutes for the burn to subside.

Summary, good fun at parties or with friends. Only drink it alone if you hate life.

I still have the remains of my bottle in my room. There is maybe 100mL of tequila left and about 6 chillis. The chillis have all lost their colour and gone a scary white/orange tinge that looks evil. And the tequila has taken on the colour. Started off clear, now has gone orangish. It is actually painful to smell and I'm not brave enough to drink it. Taking off the cap and taking a good deep breath is enough to make my eyes water, it is the most acrid scent I have ever smelt. I keep it as an ornamental bottle. That and everytime my mates who drank some see it they fall over laughing.

Same as wesp... chillis are now white, it hurts to open the bottle. I still have a litre of this on my shelf, not really brave/silly enough to take it to parties anymore. Though that said, really should make the effort and get someone killed with it :D

So which one turned out best? Guessing its best to remove chilli's after 1-2 months?

Depends how much you want to drink it. I had the chillies in there for about 3 weeks. And that was rediculous to drink. It was an interesting taste. Not neccesarily pleasurable, but interesting non the less.

It then depends if you want the chilli flavour or the chilli burn. For flavour, aybe 10 days? that about 10 jalapenos, cut in two to allow it to infuse better, seeds left in.

Alternatively, if you were after the burn then three weeks was more than adequate.

Also, I just used coyote for the tequila base. There is no point using expensive tequila cause the chilli overpowers any tequila flavour and you wouldn't be able to enjoy the extra you paid for a better brew. Plus cheapish tequila (there isn't any good quality tequila readily available in Australia) has a fairly raw taste so will add to the chilli.
