Hey guys this may seem realy newbie but hey.. i am :D
I was just wondering what type gearage you can mix, like 9sp cassets and double crank ect?
I was also wondering what type of approach i (low budget) should take toward upgradeing my old Giant H/T couldn't tell you the model (600-700bucks worth) I do a fare bit of DH stuff and some DJing so any advice would be greatly appriciated.

Not sure exactly what your asking but..
An 9 speed chain will work on 9/8 speed cranks or cassettes
An 8 speed chain will not work on a 9 speed cassette, but will work on a 9 speed chainring.
Best money you can spend on your old bike should go to your piggy bank. Bikes today are soo much cheaper that it makes it plain idiotic to upgrade an old cheap bike. $1000 buys allot of bike these days. Even the $600 that your old bike was will nearly get you a Norco dirtjumper.

When riding around i give my bike a hell of a beating and my chain seems to come off (de-rail) a fare bit i took it and got it serviced but the fella said it looked fine and tightened it and moved the chain slightly to get it to stay on, but the other day i went down a slight hill :P and with a bit of speed and my chain came off (again :() now back to the question (sozzy) i was wondering if anyone could think of why this is happening except that i am a spastic, and maybe some suggestions?

Basically- you need a chainguide if your going to ride hard with gears. They arn't cheap though, and your gears are probably flogged out anyways- so a good option is to go single speed. You can pick up a tensioner, spacers and chain for around $80.
http://www.fortheriders.com/ will give you a good idea of what you need. But go ask the local bike shop what they can do.
