Excelsior is pretty much a no go for track building, the council is doing fairly extensive bush regeneration work in there. I think I know the trail at winston you are talking about ,near the baseball fields?

Fred Catterson Reserve should have some trails as well! It used to. Also look at lake Parramatta as well.

http://forums.farkin.net/showthread.php?p=838042#post838042 post 13 and 14 for trail info on trails around the hills district… and a vid of excelsior reserve

cumberland state forest has heaps of trails there..... but KEEP OFF THE NO BIKES TRACKS or else u will cause the rangers to close it down to bikes (theres only like 1 no bikes track anyway:p )
also WALK your bike near the centres and if you see a guided tour happening either go a different trail or walk it past them :)
